DETERMINATION OF HYDROXY METHYL FURFURAL CONCENTRATION IN HONEY BY USING ULTRA VIOLATEVISIBLE SPECTROPHOTOMETER

ABSTRACT This research aimed to determine the concentration of hydroxyl methyl furfural (HMF) using UV-visible spectrophotometer to assess the quality of honey. The honey samples were collected from the three honey productive Kebeles (Degasegnen, Yekebabit and Workima) of Machackel Woreda in East Gojjam Zone, Amhara Regional State. Following the procedure of white method, the concentration of HMF of , Degasegnen and Yekebabit Kebeles’ honey were 11.18 ± 0.052mg/kg, 24.95± 0.119 mg/kg, and that of Workima’s was 56.94 ± 0.366 mg/kg respectively. All the samples were found to have HMF value less than the maximum concentration of HMF in honey by standard controlling international organizations. Thus the results were shown that the samples had good quality. Also one way ANOVA shows that there is statistically significance differences between the groups in HMF concentration at 95% confidence level (p<0.05).
